Just stumbled on your blog looking for a 'Eton Mess' recipe. I read your 'about me' section, and must admit, I am inspired by your story. I finshed my degree recently (here in Canada) and, like you, aspire to change paths towards becoming a business owner and a pastry chef. It is comforting to know that others are taking a new direction on their life course. Thank you for sharing.
Your blog is absolutely WONDERFUL. Could read it for hours and hours! I have a question - did you find that you had a knack for making such beautiful cakes or did it take a lot of practice? I am dying to make gorgeous cakes but don't have the self confidence yet!
And thanks for the tip on scaling down recipes - that's a great idea!
Bianca - Thank you so much, what a lovely compliment! I think it's mostly practice and just trying out ideas - sometimes things do go wrong but you just have to learn from it and try again. Seriously, just go for it!
